    Delicious, healthy, inspiring and colourful food to tempt both novice and gourmand alike!

This came up as a suggestion based on other books I'd read and I really liked the cover, it's so colourful and the food looks delicious. I've never heard of the author before and I'm not vegan nor vegetarian but I do love trying new tasty and healthy recipes. Having been tempted to start fermenting vegetables by Sally Fallon's recipes a few years ago,  I then read Wild Fermentation and really felt inspired. This book, however, is a visual as well as a culinary delight! Every recipe has a beautiful photo of what you can expect and is so tastefully done, it's hard not to feel inspired. Also the range of foods she covers was quite an eye opener to me as its everything from bread and drinks to yoghurts and  cheeses( vegan and non vegan), cakes, dips, dressings , stews , salads and of course all kinds of fermented vegetables from garlic to lentils were included!  The book explains very clearly why fermented food is so healthy,  producing, as it does,  lots of stomach/ gut friendly bacteria which is rarely present in our modern Western diet, and which helps protect us from all kinds of illnesses, many of which ( maybe even all of which!) start in the gut when the good bacteria is low or non existent . She includes delightful recipes like lemon and mint soda and also ginger beer and apple cider, - there are starters and main dishes, side dishes and desserts including cheese cakes and scones, - dishes for breakfast and for making cheese and of course Kefir both milk and water based, and last but not least sourdough bread and products. And she uses different kinds of fermentation from dry salting, brining, fermenting with Miso and also Shoyu etc.  She has recipes for probiotic porridge to Egyptian lentil and rice stew, pasta dishes etc etc. So this isn't a book just for vegans or vegetarians thought they'd  love it I'm sure, but also for anyone who is food curious and loves trying something different and delicious as well as healthy. A real joy and you can even join one of her courses when she comes to GB. What's more, it doesn't preach at you about 'clean eating ' but tempts you to step into an exciting different but appetising cuisine for a short visit or full time. I'll certainly be looking at some of Dunja's other books. If only all cookery books were so beautifully and clearly presented.

I love Dubja Gulin's other books so I got this as a matter of course. This book is similar in format to the others, except it's a paperback. Her passion for creating beautiful food comes through in her writing. The introduction is personal and helpful. Gorgeous photos accompany all of the recipes and they really inspire you to get into fermenting. But fermenting is a slow process so don't think you'll be able to recreate any of the recipes in a matter of minutes. If you know nothing about fermenting foods, this book would be a good starting place. It's not dry and technical. It covers the basics and has lovely looking recipes to take you beyond.. Please be aware this book is not fully vegan, unlike Dunja's other books. Several of the recipes feature dairy produce. Also be aware (certainly if you are in the UK) that finding the ingredients (like an umeboshi plum, dulse, kombu, and even nutritional yeast flakes) are going to be a mission.As for getting hold of fermenting starter cultures, that may also take some doing. However, the author gives her email address should you have problems  - such a nice touch! There's also a sources and resources page at the back.Vegans will be interested to learn how to make rejuvlac for making cashew cheese and cashew mayonnaise, and water kafir for drinks like ginger beer. I'm looking forward to making fermented red lentil dosas, sourdough bread and fermented pumpkin seed pate - just a few of the recipes included and vegan too.All in all, a nice addition to your wellness cookery book collection if you are a beginner. Shame it's not all vegan.

Excellent book with good recipes.  I am new to fermenting and this book is permanently on the side for reference.  I don't drink  tea and never have done,  But brewed as kombucha it's wonderful and so good for the gut. I've experimented with many of the drinks in the book, not had any Pepsi for almost a month and three friends have bought the book too and started fementing!
