It is made of kombucha ( kelp seaweed), katsuobushi (dried bonito flakes), and nibosho (small dried fish).I love the combination of flavors, it’s light and smells like the ocean but not fishy nor salty.I use one packet and add it to my ramen. For stronger umami flavor, I just add Japanese soy sauce to balance out the ramen broth like a shoyu ramen. I do the same thing with fried rice. It's ONLY a light CLEAR broth. BUT in Japanese culture, it is suppose to be a rich wonderful flavor- that distinct seafood flavor. NOT TO BE OVERLY RICH AS IN BOMBASTIC OVERLOAD- compared to say a different kind of rich flavor as in overload of 32/45 different type of spices(say Mexican style MÓLE). I find myself drinking this broth twice on certain winterly cold coastal days, having a simple stirred fried onion chicken cabbage or/lightly black pepper seared chilli oiled tilapia with a side of Japanese sticky rice.
