The reason for the switch was to make a paperless single 12 oz. cup of daily coffee quickly and with less cleaning. Cafellissimo is just what I had in mind for making my morning coffee. It is so simple to use. It makes hot delicious coffee right into your favorite coffee mug, rather then transferring the coffee brew from the carafe to the mug thereby eliminating heat loss. It’s made of high quality stainless steel and it is very easy to clean. It was an easy transition to go from the Chemex to the Cafellissimo. Having a understanding of coffee brewing, along with a timer and a gooseneck kettle for the Cafellissimo is key to control the brew time and water flow designed for your taste buds. The end result will be a superb cup of coffee. No matter how you determine your recipe, remember to be as consistent as possible once you find the right balance. My coffee to water ratio recipe remained the same. However, I did use a slower drip rate to finish dripping through by about 3:00-3:30 minutes.. The other notable difference was without using a paper filter it did not filter out the oils that may create a bitter taste. However, I was very surprised that the coffee flavor was argumentatively about equal to the Chemex. The pour over coffee filter method produced an extremely clean and light body that you can fully taste all those complex layers of flavor. I rinse out the filter right after each use. For cleaning just use hot water and a little dish soap with a soft sponge to clean out the oil in the filter on a regular basis. I use the faucet spray nozzle which seems to clean out any trapped fine coffee grounds. Let it air dry or use a micro fiber cloth for drying. So far I have not had any problems with clogging as some have reported. I am extremely satisfied with the filter and would highly recommend it.
