This famous Yibin Suimiyacai (crushed dried vegetable) from Sichuan China (net weight 230g, 8.11oz) . Yibin Suimiyacai is a must-have material for many delicious dishes of Sichuan Cuisine such as Han Sao Bai (Steamed Pork Belly with Dried Vegetable), Yibin flaming noodles. It could be steamed, stir-fried, added in soup and put in steamed bun. Ingredients: green vegetable, salt, brown sugar, spices, potassium sorbate, acesulfame-k.

It's hard to describe the flavor - very umami, not sour, deep and complex. I've since used it in soups, ramen, salad dressing, etc. My 9 year old daugher adores it too. I took it out of the packet and put it in a small tupperware container and it seems to stay fine going on month two now. It sort of tastes a bit of delicious olive tappenade, very hard to describe, but I really like it. It is one of those secret ingredient things that adds complexity without being overwhelming. I'm glad I heard about it and tried it. I'll keep in the pantry from now on.

Also nice: it's non-perishable and once opened, it lasts for a few months in the refrigerator, if you put in in a glass jar w/ a good tight lid. The price is a bit expensive, but I can't find this product anywhere else in my area.

**Q: What specific dried vegtable is this?**
A: It is not dried, it is semi-dried pickled mustard greens/kale/cabbage like mixture. Closer to mustard greens and kale than to cabbage. Hope this helps.

**Q: How long did you have to use these before they reached expiration?**
A: It was good until 2019 and I purchased a few months ago. Sorry I cannot read the month on the package now that it is open. Having said that, if this product was kept in the fridge, I would feel safe eating it beyond the best used by date as it is salted and fermented.As long as no mold or off smell is present, I am sure it would be still safe to eat.

**Q: How long is does this product keep in the refridgerator after it's opened?**
A: I use this to make Dan Dan noodles, I keep mine is in a pottery jar with a loose fitting lid in the fridge. It is over 2 years old and has not spoiled, and tastes just fine. For home cooking this makes about 4- 5 batches of noodles. The oil is a neutral oil, soybean or canola?

**Q: Will i recieve an expired bag like several other buyers?**
A: According to the "About this Item" section, "the date on the top right of package back is product date, not expiration date".  This is a pickled product, so your package should find.

So happy I found these fermented mustard greens. They give my Sichuan dishes that restaurant touch. Just wish it came in a jar or some sort of container to keep it in. I imagine authentic cooks use it much more often than I do and maybe quite a bit more.
