It is extracted from crushed Koroneiki olives in the region of Helia, in the southwestern Peloponnese. Koroneiki olives are arguably one of Greece's finest and best known olive cultivars. The olives were collected early during the picking season (November 2017), so it is a prized "early harvest" oil, because the olives are less ripe and produce a smaller in volume, but higher in flavour olive oil. It is unfiltered. The acidity is superb <0.21%. The olives are pressed, at room temperature, on the same day they are picked. This oil is purely the freshly squeezed juice of the olive fruit.
