So when I was looking to add a large chef’s knife to my cutting arsenal, I thought I’d give an All Clad knife a try - previously I hadn’t known that they even make knives. My other knives, a medium paring knife and a serrated knives, are Wusthof Classic. They have never given me a hard time when cutting, but their large knives are out of my price range. This All Clad chef’s knife is much more affordable, and after trying it, I think it’s as good or better than my Wusthof knives. This thing is sharp. It is not serrated, but I tested it with various vegetables, including tomatoes, notorious for not cutting easily with a flat blade. This thing sliced through the tomatoes like they were nothing, without crushing the juice out of them, and had no problems with the skin… a true miracle! This knife is comfortable in my hand, thick enough that I can achieve a cutting rocking motion without worrying about my fingers, and has a good weight to it - hefty enough to cut through tough things, but lightweight enough that your hand doesn’t tire. It is also an elegant looking knife, with a full tang and three very sturdy rivets. With proper sharpening, I have a feeling that this knife will last the rest of my life. The handle is well crafted, contoured and smooth. No burrs whatsoever. It’s a little longer than 5 inches and the blade is a full 8 inches in length. It feels like a long knife, the point is way out there. The edge is very thin. Definitely no prying with this knife. I’m not running a commercial kitchen here, so my use is simply residential. I slice vegetables mostly, raw chicken occasionally. This knife is staying sharp through all my moderate use. I have no complaints, but I’m not beating it very hard. The first time I sliced up a sweet potato it stained the blade, curiously (it’s not a very high polished finish). Initially I had some difficulty getting it clean. I scrubbed it with an abrasive pad with little result. After drying the blade, I was then able to simply rub it off with a cloth, odd. Anyway, seems like a decent knife overall.
