Steve Shapson's blue cheese kit has all ingredients mixed, but 3 of my blue cheeses with p. roqueforti ala Ricki Carroll's recipe have turned out great( not always the same, but bluey and creamy or salty/shocking-good). A: sounds a lot, but 1/16 tsp per 2 gal/ you might be correct
