**Q: Is this fermented soy, or merely "brewed"?**
A: I read the entire label twice and it doesn't say, but it is delicious soy sauce!

**Q: Can anyone confirm whether or not this is kosher (symbol on the bottle)? the us version has the o-u symbol. thanks!**
A: The Japanese version does not have a kosher symbol.

**Q: Is this fermented soy?**
A: This soy sauce is fermented in the normal way and then undergoes a process to reduce the salt content.

**Q: How is sodium reduced down to 8% and still be at 490 mg which is 50% of the regular 940 mg. ?Doesn't compute.**
A: It tastes the same as regular soy sauce, only less sodium where, 1500-2300 should be the daily limit per person, Kikkoman has 870 mg per tablespoon. So it helps keep the sodium intake per day down by about 50%
