## Description

We call it TRULY 100% extra-virgin olive oil because this full-bodied olive oil is the real deal. 70% of extra virgin olive oils on the market have gone rancid, which is why we’ve gone to extra lengths to protect ours. What makes us different is that we don’t wait until winter when the olives are over-ripe, like other brands do. Instead, we harvest in the Fall, when the olives are at the peak of freshness: green, with just a hint of violet. Olives then come to our state-of-the-art mill to produce brilliant oil. We immediately store the oil in a climate-controlled cellar until packaged in our FlavorLock Box. We taste test each batch before packaging it in a proprietary oxygen-free FlavorLock Box. **Q: What is the calorie count on this oil?**
A: The calorie count for this Corte. Olive oil is 120.

**Q: Is this for salads or can you sauté with this oil?**
A: Wonderful for dipping or salads and we used for sauteing as well until I read recently that EVOO shouldn't be used with heat, to use plain Olive Oil for that application.  Delicious tasting olive oil; we had it at an Italian restaurant to dip bread in and had to ask the brand and order some.

**Q: Is this corto's "truly" evoo? the title doesn't say truly, but the picture of the label does so just trying to confirm. thanks!**
A: The bottle I ordered about a month ago does say the word “truly” on it

**Q: Can you tell me the Polyphenol content?**
A: Although we don't offer specific levels of polyphenols for our products, our olives are harvested in the fall when polyphenol levels are at their highest.  Our Truly Extra Virgin olive oil exceeds the Olive Oil Commission of California (OOCC) and the California Olive Oil Council (COOC) standards for quality, including acidity.
