This flour is an little-known gem. It is loaded with fiber and does not raise glucose much at all. You can mix it with almond flour and make great tortillas. Strangely it has a kind of corn flavor which almost makes you feel like you are eating a corn tortilla, but with almost no net carbs. Lupin flour is my friend.

This stuff is awfully expensive, but it works just like regular wheat flour when you add it as thickening in stews. It has no taste of its own. It's high in protein and fiber, easy to use. I only knocked it down one star because of the price.
