They’re fresh, fragrant, beautiful in color and in size, and they add so much to the aesthetics of a dish. The flavor is exactly what it should be—rose is a necessary ingredient in several Middle Eastern and Indian recipes and these do the job, especially when combined with a few drops of rose water. I do a yogurt dip with rose and cardamom and the quality of the rose petals makes a big difference in the dish.
