This meat is one of the most sought after parts of the fish due to the high gelatin content which is released during cooking, resulting in a rich and thick sauce or broth, depending on the dish.You'll most commonly find 'cococha' or 'kokotxa' in Basque, used in the classic bacalao al pil pil or perhaps in salsa verde.
