My next trip produced seven plaice and a flounded, having left them in the fridge over night to firm up, I started filleting the next morning, the knife worked perfectly, removing the fillets cleanly from the bones. The flex is all important and the knife has just enough, with out being too flexable. All in all a great knife, that holds an edge well, I would recommend one to any body who is looking for a filleting knife. Review: It's a Victorinox - Always great value for money. As a chef it a decent price for a quality blade and will last many years as long as it is looked after, even with heavy use. Never in 30 years working in kitchens have I had an issue with a Victorinox. It's a great very,very sharp knife. I did not use it to fillet fish [because I like to cook with the bones]. I used it to prepare the mackeral fish [with bones]. It cut through the the mackeral very, very easily. Also I also used it to do the rest of the cooking: cutting the onions, ginger, garlic as well. It's very sharp that you can get very thin slices of all. I like it and hope the sharpness stay.
