My intention this time round was to make broccoli and cheese, which is always good. It occurred to me that cornmeal dumplings would be a good accompaniment. However, for some reason, I'm not always successful with dumplings, though I'm a good cook otherwise. Then the idea hit me: American cornbread, but baked in a muffin tray. Cornbread muffins baked that way would be the right size. I chose this brand because no milk is needed. I don't drink milk, and rarely have it in the house. This brand was a good choice in any case: the cornbread "muffins" turned out real nice. There was enough batter for eleven of them. I had some over, after finishing the soup, so put them in the fridge. Next morning, they had dried out slightly. Steaming for about ten minutes got them tender again. Three cornmeal muffins with strong black coffee to accompany made for a very enjoyable mid-morning meal. To conclude, I am very satisfied with this product, and will buy it again.
