I liked the idea of adding cheese to the recipe, so I ordered these little cubes. I ended up using half the bag of cheese cubes—which is the amount recommended on the package based on the weight of the pork. After I stuffed the casings, I simmered the brats in beer until they were cooked through.The cheese cubes stayed intact through the cooking process with only a slight amount of melting. The sausage was delicious with the addition of the cheese.The label on the cheese advised against freezing, but with a 30 day use by date on my package, I decided to freeze it anyway. If that was a mistake, I’ll come back and post more info.
