I don't know the exact temp. Haven't used ours since last summer.The idea is to get to temp, then if you don't Stoke with more wood it stays hot for example overnight and slow cooks.For pizza, it cooks them on the stone in a matter of minutes. **Q: so can you slow roast? like pulled pork? does it reatin the heat?** A: Yes!
