I rarely eat red meat, not really a fan but do like a good steak from time to time. And this Filet was THE one that could make me a fan. The steak was trimmed of all fat, had no marbling to speak of yet was melt-in-your mouth tender. It was quite thick so I “butterflied” it, lightly salt & peppered and seared it in a cast iron pan to medium rare. A baked potato, small salad and a good red wine completed the meal.
