## Description

Surubishio is the flagship series of soy sauce for Yamaroku and is aged the longest between 3-5 years. "Tsuru" means "crane" and "Bishio" means "condiment". In Japan, cranes are regarded as auspicious birds and symbolize longevity. It is said the song of cranes can reach the heavens, and Yamaroku wants this soy sauce to be like the cranes which can reach the heavens and be known to everyone. Tsurubishio is characterized as having a rich mellow flavor and is recommended for use in sushi, sashimi, tofu, grilled fish and as a secret ingredient for original dishes. A unique use of Tusurubishio is putting it on top of vanilla ice cream which creates a very caramel like flavor. Adds a surprise twist for guests and customers at a restaurant. This soy sauce is made using the traditional and authentic method to ferment Japanese condiments since ancient times using Japanese wooden barrels called kioke. **Q: Once the bottle is opened, is there a "best used by/expire" time frame?**
A: I too am Japanese, I purchase food in bulk including 1or2 gallon containers of Soy Sauce that I put in smaller decanters for day to day use.    I’ve had some of them open for close to a decade or more with no ill effects.

**Q: Is this heat treated or pasteurized?**
A: Yes, it is briefly heated to 80 degrees Celcius during the filling process. Scientifically, it has been confirmed that by keeping the temperature at 70 degrees Celsius or higher for at least 1 minute, and by packing in a closed container, pathogenic microorganisms do not grow and toxins are not produced. Our Ponzu sauce is filled at 80 degrees Celsius, which sufficiently satisfies the above condition.

**Q: How long does it last after it is opened and kept in the refrigerator?**
A: I've never refrigerated my soy sauce. I've had it on my counter for several months with no problem. I live in Tacoma and it's not really hot here, but believe that soy sauce being so salty doesn't require refrigeration. By the way this soy sauce is amazingly good. I'm on my second bottle!

**Q: Shouldn't this be 35 dollars?**
A: If you love a good soy sauce and if you live outside Japan and do not have ready access to top quality soy sauce, then yes, this is truly worth 35 dollars (plus shipping).  I recently had the opportunity to use this soy sauce with real wasabi on sashimi (a to-go order from a very good, nearby sushi restaurant) and the experience was like none that I've had in the last 30+ years of eating sashimi.  This soy sauce and the real wasabi elevated the fish to a whole new level.  Even if you only ever get one bottle to try, it is worth experiencing a top notch food product like this once in your life.

(The real wasabi I used is "Muso From Japan Real Wasabi, 1.52 Ounce", available here on Amazon.)
