Review: I’m reviewing this after first eating the fettuccine style noodle and the angel hair. I am seriously in love with these noodles. I’m on Keto so I’m watching my carb intake so these noodles have been a life savior. First of all, yes when you first open the package the noodles have a funky smell.. but honestly it didn’t really bother me. I drained my noodles and washed them down. I immediately put it into bowling water and it boiled for 2 minutes. After boiling, I drained the noodles again (don’t rinse). After, I put them into a already heated pan (about medium heat) and let them cook/dry for about 2 min while stirring them. I also season it with whatever seasoning I want and you’re done! The best thing I do is use these noodles with Alfredo sauce and they are delicious. I seasoned the noodles with black pepper and parsley and then added the Alfredo sauce. The noodle texture was a bit different at first, but I easily got used to it. Have an open mind and you will love these. One MAIN THING I don’t like is that the serving sizes are wrong (in my opinion). For me to enjoy a meal and get comfortable I use one whole package... so 1 package per person. Other than that - I love these!!!

I heard cooking it on a skillet with sauce will allow the flavor to penetrate more into the noodles so they taste more like pasta though. If you bring these to work and won't eat them for a few hours, be aware not to use a lot of spices/garlic sauce or it will be an overkill. I put the noodles in a drainer and run water over them for 5 minutes and the smell goes away.

**Q: What is the shelf life of any of these noodles?**
A: Shelf life is 1 year. A bit longer if they are refrigerated. Great for storing in the bunker in case of a zombie apocalypse along with Spam and Twinkies. lol

**Q: how do you store them**
A: I store them in the cupboard.  I find when I use them, the best method is to rinse them, then put them in a dry fry pan and sauté them until the liquid is about gone.  By drying them out they are ready for whatever sauce you wish to put on them.  They also are not slimey that way.

**Q: Are these noodles "Paleo Diet friendly?" I'm strict on my Paleo diet but would love some noodles now and again. Thank you.**
A: Yes.  I'm on a ketogenic diet and eat them.    They're zero carb, don't raise your blood sugar and are from a healthy plant.   My dad is diabetic and when he checked his blood sugar after having these noodles his readings were fantastic, better than before he usually eats.  I do a lot of paleo stuff for my ketogenic diet and if I were paleo I'd totally eat these noodles.   I love them in noodle soups.

**Q: How many servings per package?**
A: It's about two but I have found that the serving sizes were too small to fill me up so I use the entire package, since it has virtually no calories, that way I get full with less sauce.  I have a friend that has made Pad Thai with them and it was wonderful

The miracle noodles are a staple in our house. We don't do a lot of carbs because they spike my blood sugar but I find that these are perfect for what I need. Tip: Marinate these!! They absorb flavours really well. I remove these from the package and rinse really well. Then I place them in a bowl of equal parts soy, sriracha, hoisin or other oyster-type sauce with rice vinegar. Cover and let marinate in fridge for about 2-3 hours. Lightly pan fry in a bit of peanut or sesame oil for 2 minutes (overcooking will cause them to have a rubbery texture). They make a great faux-soba noodle bowl. Perfect if you're doing Keto or other low carb regime.
