What makes the 'rice' a creamy yellow is the oat fiber that it also contains. I believe it would be clear if it had no oat fiber. Hope this is helpful. **Q: Since you added oats to the product. How can you claim it's gluten free? Wheat, oats barle and rye are the 4 sources of gluten.** A: While oats are naturally gluten free, they may come in contact with gluten-containing grains such as wheat, rye and barley at the farm, in storage or during transportation. **Q: Is the rice dry?** A: It comes packed in liquid. But mine was spoiled and I never heard back from seller. They don't take returns. Still have the box. Product should look like pasta on clear liquid, mine was shriveled and in light brown liquid.
