After moving to the United States, Cuong Pham was hungry to recreate the tastes and smells of his childhood in Saigon. But not even the vibrant Asian markets of San Francisco offered the intensely fragrant first-press fish sauce, nước mắm nhi, that Cuong remembered from Vietnam. A: Our premium 40°N fish sauce is sold in 17oz. bottles. Our ultra-premium 50°N Phamily Reserve Classic fish sauce is sold in the smaller 8.5oz. bottles. Its higher quality is reflected in the higher price per ounce. "Degrees nitrogen" is a measure of the protein content of the sauce. The higher the protein content, the more umami-forward the flavor of the sauce. Protein levels this high are extremely rare in fish sauce, making the 50°N Phamily Reserve Classic a very unique fish sauce.
