As a former school trained chef I am particular in my tastes but in all honesty I was not expecting this to taste like fresh heavy cream. After reading the review about lumps, I took the advice of others and mixed about a teaspoon of hot coffee in the cup before adding the rest. It took a while to dissolve all the lumps with stirring...a slight annoyance but not enough to discontinue using the product. Even with all the stirring, a few small lumps were floating on the top when I added the rest of the coffee. A teaspoon of the powder gave me the right color for my coffee. The mouth feel was spot on for heavy cream and I spent the rest of the time finishing my cup trying to decide if I could tell the difference from the two. As others had commented, I did notice a grittiness at the very end of the cup, the last tablespoon or so. I decided to make my next cup with fresh heavy cream to see the difference. I added about a tablespoon of fresh heavy cream to my cup. Same color, same appearance. Mouth feel was the same but there was a definite difference in the taste, not sweeter but the dairy flavor I picked up with the fresh cream was most likely due to the milk sugars. That being said all in all I think this is a good product for those looking for a shelf stable alternative to heavy cream for their coffee. Calculations are approximate. According to my calculations, 1 lb of powdered cream will give you 16.5 cups of liquid cream. See my math below. My answer in volumetric units 1 Cup= 16 Tbs 3/8 Cup is approximately 6 Tbs 16 Tbs (water) + 6 Tbs (powder) = 22 Tbs, or 1 3/8 cups of cream or 1.38 cup Number of 'batches' of liquid cream from 1 lb, or 75 Tbs 75/6 = 12.5 12.5 batches of 1.38 cups cream 12.5 x 1.38= 16.5 cups reconstituted cream. **Q: Can this be used to make whipped cream?** A: Yes but you first must use 3/8 cup with water and let it sit over night in your refrigerator. Then mix and use as you would if you were going to make a whipped cream or use heavy cream for a white sauce mix. It will not instantly thicken it needs to sit with the water to thicken. The instructions are on the label. I followed that and it worked just like the regular liquid heavy cream. **Q: Can you use this to make whipped cream?** A: BuYes you can and should. But it will not if you attempt to whip it when your add water to it and try whipping at that time. To have it whip up as cold whipping cream does, mix it with your water, put it in the refrigerator overnight and then whip it until it peaks. Easy and simple to do.
