However, if you plan on using this for pizza, here are some caveats and tricks - so this cheese does not melt like regular mozzarella, nor is it very stretchy. It is also VERY difficult to shred because it is so soft. It also doesn't like super high temperatures - like those in an actual pizza oven...so here are some things you can do to make things easier: 1. Freeze it and shred it frozen - it is really the only way to shred it without making a mess - it also allows the cheese to withstand the heat a little better 2. Coat frozen shredded cheese in a light coating of avocado oil - this will help it melt and spread more like you're used to. You can also spray the top of the pizza with avocado oil after the cheese is on the pizza, too. 3. It also works well mixed with other vegan cheeses - specifically VioLife and the latest version of Daiya. This creates a lot more texture and varies the flavor a bit - it also adds more stretchiness. A: A few months depending on when the package was purchased.

**Q: Would I be able to make mozzarella cheese sticks?**
A: I was able to form a cheese stick and dip it in a JUST egg wash then breaded and air fried them on 400 for 10 minute maybe. They weren’t perfect but it did work. I think if I froze it before hand they would work better

This vegan mozzarella has been a giant game changer! It is so creamy and has a mild taste that is close enough to mozzarella to make me not miss the "real" stuff at all, but delicious as it's own type of cheese as well. I have used this to make pizza and even my non-vegan husband really loves this stuff! It doesn't melt exactly in the same way that "real" cheese does, in that it doesn't get stretchy.. but it does spread out and get super creamy. It is pricey but the quality is there. I buy a few at a time and freeze them otherwise they mold quickly after opening, but keep in mind that defrosting changes the texture a bit and makes it more crumbly. Miyoko is a WIZARD. This mozzarella is perfect. It's equally perfect plain on a slice of bread or melted on a pizza. It shreds. It melts. It slices. It can be put in the oven. It behaves in every day you expect cheese to behave. The taste is so stellar, my non-vegan partner now insists we buy this *instead of* cow-based cheese. Best of all, this cheese stays good for months unopened, so you can stock up, if you're like me and prefer fewer grocery trips. 10/10 recommend!!!
