I use this tagiolini in a white truffle pasta recipe for a rich main course. If you are going to make cacio e pepe or similar dish -- or just want to toss it with olive oil or butter -- then this is your pasta. Of course, it also tastes great with tomato and heavy sauces, but the egg-based noodles don't shine in those kinds of recipes.Despite some reviews, this pasta is NOT gluten-free.
