It does not slowly simmer like a traditional stovetop copper pot; instead, it brings the liquid to a foam in well under a minute. There is a bit of a learning curve to mastering the foam rise. On my first try, it triggered a rapid "volcano" spillover. On my second try, I pulled it off early, put it back on the base, and accidentally boiled away the foam. My biggest tip is to keep your hand right on the handle switch: the exact millisecond you see the entire blanket of foam lift vertically, toggle the switch to off and lift the pitcher straight up to break contact with the residual heat. One shot is all you get! For my testing, I tried both liquid stevia and coconut sugar. On the positive side, the handle features a very convenient locking hinge that allows it to fold down for compact storage and snap securely back up when it is ready to pour.
