The last two bikes I have owned were supplied with Vittoria Corsa Pro, and I swapped to GP5000 (28mm) within a couple of weeks each time. These win hands down on all levels - particularly comfort, performance (speed, grip), and puncture-protection (it is so rare to get a puncture with these, whereas I had punctures almost immediately with the Vittoria tyres). I’ve never had any issue getting these on carbon rims as other reviewers have mentioned - I use a Crank Brothers speedier tyre lever which helps. Thoroughly recommend these. Big mistake, maybe they grip slightly better and are definitely lighter, but on crappy Scottish roads with loose chippings the feeble side wall has already ripped apart after less than 500 miles.
