Question 1

The directions say to "set the paper filter and rinse with the boiling water."  Is this step necessary?

Accepted Answer

Some people do it, some people don't.  I do not think a "paper taste" is something I've ever noticed when skipping the step, but aside from rinsing out any potentially-lingering paper flavor and sealing the filter to the sides of the dripper, this step also preheats the dripper, which should slightly reduce heat loss during the dwell stage.  However, I find I prefer using a finer grind and a shorter dwell time (no more than 2:45 from bloom to completion of draw-down), so I honestly don't think heat loss is a big concern the way I use the CCD.  That said, it's not really much effort to perform this step, it takes all of 10 seconds and wastes all of a 1/2-cup of water; I always do it, even if not strictly necessary, on the off-chance that it does offer a subtle benefit.

Question 2

Can this be used with a small gold permanent filter?

Accepted Answer

Yes, I use the Blue Brew filter (although it is gold and not blue!) It fits in the plastic cone and does not interfere with the release mechanism. However I notice that, due to the different expansion rates between the plastic cone and the metal filter, the filter becomes very firmly stuck in the plastic cone after use. It comes out by turning the dripper upside down and giving it a sharp rap on the counter, but it is a minor nuisance.

Question 3

How do you properly clean this product... anyone tried bleach?

Do not use bleach. If it is stained use baking soda in hot water and let it soak. But if you rinse it every time and doa deep clean with baking soda or baking powder it won't stain and coffee oils won’t collect on it.

how big is the large and how big is the small

Accepted Answer

I have a large.  I get a 500ml of coffee  per pour-over.  Two loads of water yields a liter of coffee. I use 3-4 measures of coffee grounds for a liter. A liter requires 2 pour-overs.  I hope this helps Robin
