Brewery Cleaning: Equipment, Procedures, and Troubleshooting

Good compendium, covers what you need to know...
The media could not be loaded. I started pro brewing in the mid 1990's got my PhD in the area, taught graduate, undergraduate and seminars. Back then, there was no "one stop shop" for what is collected here. It covers the basics, such as the benefits of turbulence during CIP (causing mechanical cleaning), caustic/CO2 interaction (which is really important - if you've ever seen a crinkled or imploded tank), heat exchanger cleaning (I think most small craft brewers are intimidated by a rebuild - although it could have covered some of the mechanics of heat exchange breakdown beyond 'have some spare gaskets'). Good info on welds. It also covers emerging cleaning technology like acidified detergents. It seems geared toward larger (vs brewpub, I never had a foam cleaning system) shipping breweries, although it's aimed at craft brewers and the same principles apply. It is a little heavy in parts on the chemistry for most brewers I've taught, but it covers the practical aspects. Draws heavily from Diversey, but that's ok, those guys are experts. I'd buy it again. Good compendium.

stellar!
I'm a professionnal brewer for 11years (with a master in brewing), and I'm astonished how I can learn on a single topic with a single book! If you get this one and the wonderfull "Principles of Cleaning and Sanitation in the Food and Beverage Industry" you won't be afraid of the subjet anymore! Have a nice cleaning day!
