Can these be kept in the fridge for long periods at a time?

I keep several in the freezer at all times and have for almost a year and I haven't noticed any problems.

Has anyone just cooled the glass by putting it in the normal refrigerator space, instead of the freezer, to avoid gel expanding/breakage?

Yes, I have. The only thing I noticed is the temp of the glass is less than in the freezer. I used an infrared temp gauge to check it.

how long does it take to chill your beer or do the beer have to be cold first?

I always use cold beer. I wouldn't buy these glasses, I bought them as a Christmas gift in 2020, one broke within 4 months. The other one is still good so far, but for the price I certainly expected them to last better.
