I never used collar stays before and don't understand how these work. How do they stay on the collar ? Thanks

TLDR: They are to keep the collars flat and near by sliding into pockets on the back of dress shirts' (not button downs that include buttons on the collars) collars.
What stays is the collar (and the collar stay in the little pocket on the backside of the color) and the way they work is that they slide into that pocket and keep the collar looking neat and flat. Those two little pockets each go from the tip of their respective collar point to the fold at an angle (think from the apex of a basic triangle to middle of the bottom line, which makes it diagonal outwards from the wearer's perspective) to maximize the collar stays' effectiveness. Think of it, if you'd like, as adding structural support to a collar on a dress shirt. This is opposed to button down shirts (that have buttons near the collar point; there's technically a difference between button up (dress shirt with no button the collar) and button down (buttoned shirt, including on the collars), but just like the word, "literally," that nuance has pretty much been lost) and are less formal.
I am nearly semantically satiated of the word, "collar," now (haha).

Will these show through white shirt collars?

I wear almost exclusively white shirts and I have not noticed these showing through.  They are a high quality product and make a difference in how your collar lays.  Highly recommended!

Im looking for collar stays that can be bent and curved and hold in that shape. Are these bendable if I wanted it that way?

Might be a little difficult with stainless steel. I'd recommend either aluminum or even brass stays, as those metals are softer and bend easier.
