Colatura di Alici Anchovy Extract from Cetara, where the colatura is made, is well-known among the greatest chefs all over the world. We tried this tasty condiment with a simple farro and anchovy soup. This is how the "Colatura" of anchovies was born: it is said that the monks had the idea of making a condiment with the liquid straining down from the barrels to saison their simple and poor dishes, similar to the old roman fish sauce called "garum".Suggestion: You may use it as seasoning to almost anything: cooked vegetables, peas and beans soup, cereal soups and all kinds of pasta, but be careful, the cooking water should not be salted at all.3.4 fluid ounce (100 milliliter)Ingredients: Extract of salted anchovies, saltPackaging: Glass JarRegion: CampaniaProduct of Italy Review: Tasty Addition to Food - I use it sparingly both because of the cost and the fact that the pungent odor scares me a little, but find that it adds an interesting depth to tomato toppings and sauces. Put a drop or two in a mushroom risotto and it pepped up the flavor considerably. Probably be good in a pasta dish made with herbs, garlic and oil or in a spicy salad dressing. Haven't had it long enough to try it in that. many recipes. This will become a staple in my kitchen right along with the olive oil and balsamic vinegar. Those Romans knew something about eating well. Review: Fishtastic, delicious, and the best out there. - Briny , fishy and full of flavor, this oil will add so much depth and character to every meal it comes into contact with. Don't be fooled by the size of the bottle, a few drops goes along way. . Wonderful product... . Sept 2018 update Just a side note. I bought another brand a few weeks ago. It pales in comparison. Roman Garum
The colatura is what the ancient Romans used as Garum for giving a wonderful salty taste to various foods. I have been using Asian fish sauce, (the Red Boat is the best) for Garum in my cooking. Now I tried the Colatura and it is very good the only drawback is that it is quite expensive. It comes in a little bottle and lasts for shorter time than the best Thai fish sauce. But either of them are great addition to cooking.

It's fine
I bought this after reading about garum, the ancient Roman fish sauce that it's based on. I made some linguine with Parmesan and this, and it was good, but nothing amazing. I could have got fish sauce at the grocery store and it would have been the same. Glad I tried it overall but not really worth trying again.

Adds Amazing Flavor
It's amazing how much flavor a few drops will add to your dishes. I have always used anchovy filets and paste to season. When I started using Anchovy extract the flavor of my sauces, gravies and dressings there was noticeable improvement in flavor. No negatives. Yes the price is high, but worth it.

Delicious
I never knew this existed until I read an article online about another veteran Italian who discovered also discovered it.... and it's amazing. If you like anchovies or are just looking for a good fish sauce, give this a try.
