Going into hospice - cut out from rest of world, will this with a galazy 6 active or galaxy s7 been enough

Yes -- if you are in your home, and have Wi-Fi, you are set. I expect the Hospice Home, if you are going into their residence, will have Wi-Fi. The charging cord is a good length, and it can charge while you are not using it. Very nice battery life. 
My experience with Hospice is that you will be able to be as much a part of the world as you want/need to be. Especially with this lovely Chromebook, you can video chat using Duo or FB Messenger or dial out from Google phone. The Asus Chromebook is very lightweight, so if you go to a sunroom or sit near the window in a recliner, you can easily carry it with you and watch movies, or read a book, or write notes to email or to post on social media. You can virtually visit places you have wanted to see, as well as access information and play games online with people you know or against the computer.
The bottom of the Chromebook has not gotten hot for me, and I usually have it in my lap. You may find a piece of rubbery mesh shelf liner atop your bedside table will keep it from sliding. The aluminum case is nice, but especially if you want to stand it up like a  tent it will give you some grip where it contacts the tabletop. And the screen and resolution is excellent to watch a movie with a friend. You can access your favorite music, too.
The cloud storage should be helpful. You don't have to have everything resident on the computer. You sign into your Google account, and it is accessible to you immediately. 
You should be able to use your Galaxy on Wi-Fi, too. Your reception should be much better than on a data plan.

Is the Asus C 434 still worth getting in 2021 when it is already 3 years old come March 2021?

I bought my 434 within 6 months of its release date, and while I am happy with it, I would get the newer models if I were purchasing today. I run into compatibility issues with apps from time to time which I attribute to age.

you can get a screen cover if you feel unsure. i recommend using rubbing alcohol or acetylene to wipe the screen down it works for keyboards too
