Yaxell Gou 3-1/2-inch Paring Knife, 1-Count

After having purchased a number of Japanese knives, I found this one is even higher quality than most. Great balance and edge quality.

Very sharp and holds an edge very well. A little more heft than the German knives that I own. Despite the hardness of the edge it isn't hard to sharpen. I can get this knife to a much keener edge than I can on other knives. I own the Yaxell GOU Santoku also and love it. I reach for these 2 knives 90% of the time.
