Special formula for German baking
It's almost impossible to convert recipes from Germany that call for "Ein Pรคckchen Backpulver" because they're referring to Dr. Oetker or similar baking powder that is pre-measured in a packet and composed of not only baking soda but disodium diphosphate and starch. It's a single action baking powder and the proportions are proprietary. So it's hard to figure out how to use a mix of baking soda and say, cream of tartar to replicate its proper action.Instead, just use the original and follow recipe directions. I have a cake recipe from Switzerland I really like, a Bundt-like cake made with red wine and chocolate and cinnamon. It calls for this, so I use it.
