Seasoning the pan properly is essential
Followed the directions on seasoning the pan, it was a lot of work to get all the fine metal dust off. The end results are phenomenal. I decided to deep fry katsu chicken for the initial test run. Perfection between the oil and heat maintained an even temperature for 45 minutes and 12 perfect pieces of chicken. That finished off the seasoning of the pan for beautifully seared steak and egg breakfast this morning. I have a glass top stove so hard to use and maintain temperatures. I am in love with this pan.

If I could return this I would. Missed the mark.
I was super excited to get this. I expectedit to be large, but it was significantly heavier than I expected. But I could overlook that as long as food didn't stick. I spent about half an hour seasoning this outside due to all the smoke, and washed several YouTube videos on the best method as well as oil. I used Flaxseed Oil, adding a super thin layer of oil, let it brown/cook in, then applied another thin layer, and repeated that several times. After this entire process and my clothes and everything being saturated with oil smoke, I still felt it was worth it if this pan lived up to expectations. It did not. I heated it up to a high temperature, added avocado oil, then put in an egg for the egg test. The egg immediately stuck. The result was so bad I had to soak and scrub the egg off. I went through the entire seasoning process again, just to have the same result, stirfrying vegetables. I understand this won't be as good as non-stick, but I expected food to at least release without having to scrub under a sink. I'd return this, but I feel like there was no claim to being non-stick, so I'm chaulking this up to my mistake.

de Buyer Beware - Hugely Disappointed in Quality
Pictures speak volumes. I was so excited to add this deep fry pan to my collection. The pictures make it look like I've had for quite some time. This is after 1 washing with mild Dawn detergent, no scrubbing, nothing harsh used. The black that came off of this pan onto my cloth and hands was ridiculous. When I buy any kitchen cookware item, I always wash first. This is the result. I had it a total of 3 days before I used it (received last week). I've notified Amazon of the poor quality and so far return is not an issue. Will update if it is. Must have received a lemon compared to the other reviews?!

Love it, mine did not season completely but it works fine, with a bit of oil and good temperature it won’t stick, I’m a gas stove guy, my stir fries went to a new level, my veggies are delicious, I don’t even like veggies

Pan comes with no plastic bag to enclose. Pan is not new, has markings and scratches.Will not buy from this company again.

Very good quality fry pan
Very good quality fry pan. From frying the eggs in the morning to preparing the whole dinner dish, we use it almost every day. We love it, and have no dislikes about it.

Une poêle culottée devrait se vendre plus chère qu'une neuve qui est à culotter.---Mettre plus d'huile pour la cuisson? Bah non pas plus qu'une poêle aux revêtements puisqu'il faut de toute manière un fluide conducteur pour "griller" et cuire votre nourriture.--- Huile fumante?Changez de puissance de feu! Vous chauffez trop fort ou la poêle est moitié vide tout simplement.Les plus:- Infatigable, dure des décennies, voire plus- Acier Bleui (pas de l'acier bleu genre : XC75,70,80 etc..) pour protéger de la corrosion à ses début d'utilisation- Hauteur confortable pour des poêlées de légumes, elle est mi-poêle, mi-Wok- Monte très vite en température, effet maillard à l'ancienne assuré!- Manche qui chauffe moins que les lyonnaises ou les classiques due à la hauteur de la coupe "Paysanne"- Demande moins d'énergie pour un meilleur résultat à la cuisson comparés aux poêles en aluminium revêtues.- Poêle Acier = non toxique au contact des aliments puisque composé entre 98 et 99,8% de fer dont l'organisme l'assimile bien à contrario des revêtements synthétiques.Les moins:- Difficile pour les Newbies (débutants) qui ne comprennent pas toujours le principe de culottage- le poids n'est pas à négliger selon la taille de votre poêle. Perso une poêle D 28cm de 2,5mm d'épaisseur ( version B element ), vous avez intérêt d'avoir un bon poignet sinon "crack" ( je plaisante, mais n'en suis pas loin).- Toutes les poêles de ce type devraient être équipés par défaut d'un manche recouvert par deux demi-rond de bois pour soulager l'ardeur de la queue feuillard et ainsi améliorer l'ergonomie de la tenue en main.--- ☝️😌 Non, non, les poêles ne sont pas fabriqués avec "du fer à ferrer les ânes" à lire certains..., c'est bien de l'acier de bonne qualité. Il faut être du métier pour juger et pas juste stylocrate agnostique.
