Premium Venison Summer Sausage.
This is some really great stuff. Summer sausage has a wonderful flavor, isn't real spicy, and goes great with cheese and crackers. Or, slice off a piece and enjoy it straight up. In my opinion you can't go no better.

great kit - better flavor
I always have a lot of ground venison at the end of the year and like to turn it all into summer sausage. The summer sausage you get from the deer processing places, they mix your meat with everybody else - i like to eat my own hunt. Having used a few different kits, as well as my own recipes, I have found this is the best for me. You MUST used a cure and this comes with cure. Cure keeps bacteria from growing during the slow cooking process. What I like about this kit is the flavor, easy to mix, not too much garlic, not too salty, nice flavor that balances out the game. It comes with two 15lbs packs of cure/season and the casings for 30lbs of meat. You need your own sausage stuffer machine. I cold smoke first (at ~120deg) then bring the temp up to finish. The key is to NOT let the meat get above 160 (or all the juices run out). The kit has exact directions, just follow them and you are good. You do not have to smoke. Smoking adds that nice flavor, but, I also have done in just the house oven (convection oven works best), or a combo - where I cold smoke, then finish in the oven, where I can really control the exact temp. Plan on ~10 hours of total cook time. Get a good mee\at thermometer. I also sub 1/2 the water in this recipe for honey as it gives a nice flavor. (but I'm a beekeeper so I put honey in everything - that's just me) Have use with just hamburg (no extra fat), with good results. I mostly use for deer, the deer in my area is really fatty (they eat corn/apples all day) so I only add 3lbs of pork to 12lbs of meat. Again the trick is not to allow the meat to get go over 160deg - or it really dries it out.

Excellent kit that even a beginner can use
We had never made summer sausage before. This was recommended by a friend who makes a variety of different venison sausages, and Iโm glad for the tip. This worked wonderfully with organic beef, and was very easy to use and understand. The flavors are tasty and we will also try other options from this same company, after this is used up.

Wonderful flavor
Used this as my first effort at venison summer sausage. There were two packs of seasoning and cure each, so it was easy to make two batches. One each of plain and ine with jalapeรฑo jack cheese. I let mine sit overnight in the fridge to really let the flavors bloom. I have meat lugs around for my deer processing and they came in handy to place right in the fridge. I have cure in the house and could have gone that path but was looking for an AIO kit. I'll be buying this again. These things are massive at about 3lbs a piece, so I cut them in thirds, vacuum sealed and froze them. They thaw in about 1-2 hrs this way. Now I have 2 sittings per section without worrying about eating 3lbs of it before it goes bad. I smoked mine in a pellet blend with hickory, mesquite and apple and it has a great smoke flavor in it with a little subtle apple. Delicious.

Hi Mountain kits are perfect for sausage making as the spices come premeasured. My husband makes his summer sausage with this kit and everyone absolutely loves it!

Great value
This a nice kit I go heavier on the spices than they list because I like a little more kick. Iโve made it with hamburger, use the lowest fat content possible. I have sausage inferno with pepper jack cheese going in today. I even added more hot spices to give it plenty of kick.

Secret Indeed.
I use these kits to make Venison summer sausage every year. Overall, the kit is well packaged. The ingredients come in sealed bags, and the instructions are easy to follow. To be very successful with this kit, there are a few things that will make your life easier. - A sausage stuffer is a huge help. Many grinders come with stuffing horns, but these do not work as effectively as a dedicated sausage stuffer. When the sausage is cooked, it tends to shrink and shrivel the sausages. This degrades their appearance, and the effect is worse when the casings are not firmly stuffed. A sausage stuffer helps here. - Hog Ring Pliers is a great way to seal the open end of the casing after stuffing. They are inexpensive. - If you do not think you will be able to make a full kit's worth of sausage at once, a sensitive kitchen scale will help tremendously. The kit does not tell you how much of each ingredient is included, as they assume you'll be simply using all of each ingredient. A kitchen scale will help you portion out the ingredients to make a half-kit, for instance. Everyone raves about my summer sausage, wanting my secret recipe. Tee hee!
