Can this be used to roast a chicken?

If you cut the chicken along the back bone and open it up, you can cook it whole.

Can I use the insert in the oven (ex: Holiday Yam Casserole), then insert the casserole in the slow cooker to keep it warm on a buffet table?

Yes--U can use the insert in the oven & then put the insert into slow cooker & use as a warmer--no problem

HOT! I'm doing "water test" with 2qts of water. The outside is really hot! Is this normal? Has anyone left it cooking while away?

I did the water test on low and after 2 hours it only got to 140 degrees (should be 160) so I always cook the first hour on high for safety, then the rest of the time on low. Or you can continue on High for the allotted time.

I'm having problems with the center not being finished. Does this crock heat in the bottom or just around the sides? Thanks!

The heating element in all of our new Crock-Pot slow cookers are around the circumference of the unit as well as the bottom. We would recommend having at least one cup of water or liquid in the stoneware and it should be 1/2 to 3/4 of the way full.
