Could you use this to make smooth purees and pastes like hummus, nut butter and baby food?

No, it doesn't make purees such as basil pesto, basic chopper but no good for smooth purees as that was what I bought it for, so quite disappointed.

Can you chop harder veg as in swede or carrots?

You can chop hard veg just make sure the veg is small. This is a great machine much better than the one we had previously which burnt out. Worth every penny xxx

Is it good for chopping parsley?

Its very good for chopping onions. Cannot see why it will not be good for parsley but be careful it could turn it into a pulp. So experiment with the number of turns you use

Has anyone tried chopping the vegetables really small (like for manchurian balls) without having them turn into a mush or paste?

Don’t blend for long. What I do to get my tomatoes and habaneros in small bits is to blend and pause, blend and pause, 3seconds each time, till I get my desired texture. Once I get that, I stop blending, because any more would turn it into paste. I’m not sure if that would work for manchurian balls, but it’s worth a try.
