Q: Do you know what weight paper this is?

Not exactly, but it is heavier than regular rolls of white paper. I'd guess it's about the weight of the paper used for a manila envelope. I used it to make a 20-foot family tree which I had to roll and unroll many times, and I did not have a problem with it ripping.

Q: Does this paper stick with double sided tape? I'm having trouble with the brown paper that has a shiny side not staying stuck down.

You can stick light things to it with double sided tape. I made a 20-foot family tree with it and had to use Command strips placed every foot to 1/2 feet which worked very well.
