Does the canopy/light separate from the down rod or are they fused? Might be able to use slope adapter there like a fan

The light can not separate from the down rod，but compatible with most standard dimmers.

No I do not believe that they can. They are strictly 120 volts. If you do a web search for 120 volt lighting for home you will probably find something available.
