Great Product - but net carbs are actually double than the Nutrition Facts as pictured
Great product, bakes well, can substitute 1:1 for almond flour in any almond flour recipe. I use it combined with lupin flour for keto diet - so far biscuits and waffles. Absolutely fantastic. However, carb info on package I got is greatly increased (and fat decreased) from package pictured on Amazon.The 14 oz. Finely Ground Hazelnut Flour from Whole Hazelnuts pictured on Amazon has 1/4 c. (28 g.) serving, 17 g. fat, 5 g. carb, 3 g. fiber = 2 net carb per the 1/4 c. serving. So 1 c. flour in a recipe = 8 net carb. Good for keto.The same package - front is exactly the same, same 14 oz. - has Nutrition Facts for 2 Tbsp (14 g.) serving, 6 g. fat, 4 g. carb, 2 g. fiber = 2 net carb for the 2 Tbsp. serving -- which = 4 net carb per 1/4 c., or 1 c flour in a recipe = 16 net carb. Yikes!! Not quite as good for keto diet (though still doable). And the fat is less.I understand that re-testing, getting product from different sources, the numbers can change. Just a huge surprise for us keto bakers who rely on Nutrition Facts product information in choosing our purchases.Looking at other listings for Bob's Red Mill I see some pictured have the old (1/4 c.) data and some the new (2 Tbsp.) data. Would be nice if Bob's Red Mill updated them all to be current and correct.Looking at other listings for hazelnut flour, for those who list or picture the Nutrition Facts, the newer data (2 net g. carbs per 2 Tbsp./14 g. = 4 net g. carbs per 1/4 c./28 g.) is consistent with the other brands that I see.Great product, good quality, Bob's Red Mill brand always good. Still worth the purchase. (Just eat less of it, maybe increase the lupin flour portion!)

a very nice flour
While I don't use this flour very often, it adds a nice flavor to baked goods. Unfortunately it is no longer available to me locally. I was grateful to find it via Amazon.

I am one of the lucky ones: my bag was fresh and delicious. My only small gripe is the price.But every so often, I must whip up a batch of Vanillekipferl - the smell and taste of Christmas in the house in which I grew up. This pre-ground nut meal makes that possible in my desert home far far away from specialty grocery stores.

In several recipes that call for almond meal crusts, I've successfully substituted hazelnut meal. Almond meal tends to get a little spongy and dense. I think hazelnut meal flour holds its crumbly, nutty texture much better. Plus, the flavor is so much more interesting and complimentary. Perfect for crusting fish, meats, or vegetarian "meats". You can even use it as a flour substitute for some kinds of cookies and muffins. But my favorite use so far is my low-carb chocolate-hazelnut cheesecake crust:1 cup hazelnut meal, 1/4 cup Bob's Red Mill coconut flour, 1/4 cup cocoa powder, 1/4 cup Splenda, 1/4 cup melted salted butter. Press into the pan, toast at 450 for a few minutes, then pour your cheesecake batter on top and bake as directed!

Fantastic taste and texture
Got this to mix with other things for baking and to coat fish and chicken. What a great product, more of a meal than a flour and perfect with unsweet shredded coconut for fish and chicken breading that isn't breading. If you rub the fish or chicken with a little coconut oil or any oil really it sticks like glue. If you want to do a shake and bake type deal this stuff works great, just put some of the meal in a paper or plastic sack, add your spices, and shake and bake. Comes up crispy and delicious. lovely toasted nut taste when baked or fried.
