Can each burner utilize the full 1800 watts or is each burner maxed at 900 watts?

The manufacturer's answer here is wrong. This unit is powered by 120V. An appliance with a power cord such as this is limited to a maximum current of 15 Amps. Multiply those two numbers to get the maximum possible power draw for the entire unit: 1,800 Watts. You cannot turn on both burners and have each consume 1,800 watts. The circuit breaker would trip to prevent your wiring from overheating and causing a fire. It's basic physics. Reference: I am an electrical engineer.

Can a 9 1/2 inch diameter pot (stockpot) be used on the larger (8 inch diameter) cooking element on the 24" cooktop?

It would be just fine. The heat starts in the middle.

I want to use in an off grid application. can the unit be run on 110vac? and what is the total wattage if all elements are used full power at once?

No, the total wattage is about 10200W

What sizes are the rings? Will they heat up a 7 1/4 Dutch oven or a 12 inch skillet?

The answer is yes on both. We use a small fry pan and my 12 quart pot, and everything we have in between. Very happy with ours.
