Tastes good, will stain your pan
I had never heard of forbidden rice before and wanted to give it a try. I liked the texture, taste and felt it was very healthy. It did stain my tongue (possibly my teeth temporarily) and my pans. Regardless, would eat it again and buy this same brand since it's organic and tasted very good.

Great taste!
Love the nutty taste and the whole grain benefits that is missing in white rice. Itโs a rich nutty flavor that goes well with most vegetables and fish. There is a purple tint when water is added, but I understand the color is caused by a flavonoid in the rice called anthocyanin pigment (a type of antioxidant).

Can't tell whether this Is genuine black rice or not
The package says this rice was steamed (and dried) before packaging. I don't know how steaming makes a different rice than parboiling. I am giving this product a neutral three-star rating because I cannot verify whether the black coloring on the bran is natural or from a black dye. The rice kernels appear jet-black with no hint of any other color, which in itself makes their appearance suspect. I found two well-known methods online for differentiating genuine black rice from rice that has been dyed or artificially color-enhanced. One method is to soak the dry black rice grains in a clear glass of vinegar. Swirl the white vinegar/dry black rice mixture for a few minutes. If it's genuine, the anthocyanin on the black rice bran will turn the vinegar solution slightly purplish/pinkish. This black rice passed this test. However, I suspect it is possible to fake this test with the appropriate colorings or coatings, so another test should be used IN CONJUNCTION WITH the vinegar test. The second method is to examine the black rice grains under a 10x or 20x loupe. If it's genuine black rice, there should be a light colored (almost white) bare spot where the germ was removed from the grain. These black rice kernels failed this test. The kernels are jet black throughout the surface. No tiny white spots are found near where the germs were removed. It has a lovely, chewy texture when cooked at a volumetric 1:2 ratio of rice to water. It has a decent aroma that tastes natural, but it is nowhere near as aromatic as wild rice. Wild rice has a much more pronounced fragrant aroma that's unrivaled by any other rice varieties I have ever tasted. The aroma profile also differs between wild rice and this black rice. All in all, I am confident that this is a full-grain rice with a natural bran. I just know enough to state with certainty whether this is genuine, unadulterated black rice or color-enhanced black rice.
