Stays soft. Yes you have to handle with care. Use a spray booth and covered surface or you will have cocoa butter all over your kitchen. Nice product.

If the product is best applied to a frozen cake (actual cake, not a semi-freddo), must the cake be stored in the fridge? Giving the cake as a gift.

I personally would store it in the refrigerator.
