I used only I packet of the oak that came with it I think that two might be too much. The fermentation was a bit slow but It stopped at 0.996. I did use a bit of yeast hulls so your mileage may vary without it and used EC 1118 as my yeast. Overall I would buy again. This is shaping up to be a great wine
