Perfect knife
Im a butcher by trade and as my old dexter got sharpened down to a tooth pick and couldnt hold and edge to save my life i upgraded to this as i had been using forschner skinning knives and i say i should have done it along time ago this knife is perfectly balanced and stays sharp all day long in the slaughter room, i slaughter 12-15 beef at a time and this bad boy keeps me at the rack and off the stone i can spend all day lopping legs and zipping them open with nothing more than a few whips across the smooth steel very high quality steel, i will only use victorinox-forschner for as long as i live

Having a really sharp knife is heaven
I bought this knife based on review of the brand on a cooking show. I'm very happy with my decision. This is my third so far. The TV review had comparisons with some really good knives and this compared very favorably and at a small fraction of the price. And it's cheap enough to buy another if you have any problems. Not something I can say about the other brands with prices in the triple digits for one knife. Yes, I have a few and they don't get used as I'm afraid of ruining then. Dumb! This is slowly becoming my favorite brand.

Best boner I ever had
I used it in a commercial fish house, it holds an edge well and has a very comfortable handle ,even after hours of use. Blades are as good as Wusthof knives I have bought but at a 1/4 the cost

Good performance!!!
Great knife for the price and it does the job!!! I cut up a lot of chicken breasts with bone in and it works fine!!!
