I've been baking sourdough for about six months and got a lame in with my banneton. It had a blade on a plastic handle with a plastic cover. It occurred to me that I really needed a decent lame whose blades could be replaced. My first use of it was a delight. An easy slice through the dough, and so easy to clean (carefully). It comes with spare blades and a little leather hood to cover the blade for storage. I'm very happy with it.

Good tool for cutting dough, I use this as it's much easier to create pretty patterns on dough vs a knife. Easy to use, sharp blades, smooth handle and it comes with a little leather covering to use with the blade when not in use.

I started baking bread 4 weeks ago. I am completely obsessed with using the Dutch oven and just started my first sourdough starter. Scoring or cutting/marking bread is a way to make your bread look pretty and rustic. I started with a knife, but this scorer is brilliant and makes it easy. I was going for a muffin top type look here! I will continue to update as I go. Came in a nice leather safety holder and a good few extra blades. Comfortable handles as well.

Blades only last one cut before you need to replace.

I had always had problems making a cut in the dough before baking it. I had a plastic lame beforehand, and it didn't work well.This one seems to work very well. The curve makes slicing much better (It helps to use the correct hand when making the cut)

Find if not carefull blade flies off and blade hard to fit without getting a bad cut to fingers.

It takes quite a few goes to get the hang of how deep, fast and what sort of pressure to use but there is no real alternative to slicing baguettes before baking than one of these. Frustrating at first but it does get easier. My tip is to gently sink the corner of the blade into the dough and firmly slicing lengthways, only 1 or 2mm deep (plenty of vids on the 'tube of you' to watch). Comes with spare blades but 3 months of baking everyday and I have not had to change the blade yet - just keep it clean and it will take care of the rest.

Esta greña hace su función perfectamente. Me costó cogerle el truco, pero una vez aprendí, hace unas líneas estupendas en el pan.Por el precio que tiene, me hubiera gustado que viniese con un estuche donde guardar la greña y las cuchillas, ya que no me gusta dejarla sin un recubrimiento al ser un instrumento altamente cortante.

Les incision sont faciles à pratiquer, le résultat est net et ne "s'effondre" pas pendant la cuisson.Attention toutefois à prendre les précautions d'usage à l'utilisation, dans la mesure où la lame de rasoir montée sur le manche est à vif. Et bien sûr, toujours utiliser le capuchon de cuir pour le ranger.
