This is SOOO good... I made egg fried rice with shrimp, the flavor was unbelievable. Its even better then the real white rice. The final texture of the cooked fried rice dish reminds me of beaten rice - used in some Indian dishes, which makes the rice a bit chewy...for the lack of better term. Since this is almost 0 calories, I can add more meats, olive oil (or coconut oil) and/or nuts and not worry about make it too calorie dense. Since then I have tried several side dishes and everyone of them exceeded my expectation. the best part is no need to spend time cooking rice. Also the product can handle heavy mixing and stirring and still remain fluffy unlike real white rice.I also mixed other cooked grains/cooked dry peas (like green chick peas, black eyed peas) and it turned out great. I can eat so much more and still stay within the meal calorie goal. (I use myfitnesspal to track).Initially, I just got this to balance out the calories during the Christmas holiday season but my order was delayed by 2 weeks (out of stock) and the seller immediately apologized when I contacted them and refunded me as a good will gesture. My packet still arrived on Dec 27th instead of 14th. It was worth the wait. I am customer for life and I have subscribed for auto deliveries now.The only thing I hope they would change - the price is higher than most other brands (but this still is the best tasting and texture, I have tried them all I would continue to buy these.) It is double packed with 2 really high quality packaging. I hope they find a way to reduce the packaging per oz of the product and offer a bulk price for a larger quantity inside each packet. I am sure lot more people would try this if they reduced the price. Either ways, I am sold and I plan on making this a part of my must have pantry items.

Delicious and Easy to Make
For those that are new to this, you do need to rinse these for a couple minutes before cooking. Then toss them in a wok or pan for two or so minutes, just to cook off some of the excess water, before putting sauce in with them and letting them finish cooking in the sauce as it heats.I've seen complaints that these can be rubbery or even unable to be chewed. Although they have an interesting feel when you bite into them, they are not as chewy or hard if you don't overcook them. You need to be careful about that. They shouldn't be cooked for long, especially without sauce, or you'll end up with noodles you can't enjoy. Do not cook them alone in a pan or wok for more than two or three minutes (and not on high!) or you'll end up with an inedible disaster. I cook them around medium-high. But again, no more than a couple minutes without sauce.This brand is nice because there's not a strong fish odor when you open them. They don't have much flavor either, which is exactly what I want so I can taste the sauce/toppings. It cooks up fast, so it's nice for those nights when I haven't planned my dinner ahead of time. With less than ten minutes of prep and cooking time combined, it's a nice treat without the work.Lazy meal: if regular Alfredo sauce is too boring, add Montreal steak seasoning, pre-cooked chicken (you can get this refrigerated fairly inexpensively from Costco), and some steamed broccoli (the steam in bag kind, do not use another pot) and you've got a full meal in a few minutes. Start the broccoli in the microwave before you do anything else and it'll be ready to add to the sauce right when you need it.

Definitely worth a try!
So I read a lot of reviews and found the common remarks as true, 1) when you open the packet there is a very slight fish smell BUT as soon as you rinse them it is 100% gone! 2) Very easy for a quick meal, does not require boiling. After I let them drain I just pressed them gently between a couple pieces of paper towel which made them nice and dry(ish) to remove excess water. 3) I mixed them into a chicken sausage and veggie dish I made and they added some much needed bulk/pasta to my meal and was very satisfying! 4) The consistency is a bit rubbery and some people liked it, others did not but for me, my first bite was hm not so bad, I could deal with it because it tasted good but then as I continued eating ended saying I really like these - a small price to pay for noodles that were delicious and healthy! In Weight Watchers they are zero points for the whole package (my friend scanned the pkg). So I'd say give them a try if you are open minded and looking for alternatives to stay on track for health an/or dieting (for me both). Just remember nothing that is not the real thing is not going to taste exactly like them BUT you may find, as I have, that you will get used to alternative foods and then end up loving them! I can't wait to experiment with them in other recipes!!! They are a bit pricy, as is all this kind of stuff, but for me I don't mind and I make it last.

Texture like slimy boogers
The texture was terrible. Like wet boogers - slimy. I could have dealt with that, but the other factor was that my body didn’t like it. I bought a whole case and had to throw the rest away, b/c my body felt sick just by thinking to make another batch. I couldn’t even stomach eating the leftovers. I put sauce on it and seasoning, but that doesn’t remove the texture. I felt just as hungry eating it, but with nausea. It’s a big no for me.

Superior laxative - but nothing like wheat udon
Very effective laxative, but not really a great food product. The taste is neutral/non-existent, which is fine and would make them a decent carrier for sauce. But, the texture is very rubbery/jello-like and it doesn't absorb or hold other flavors. It's just nothing like actual udon. Unfortunately, I haven't found any good packaged GF udon, but I have had success making my own with GF flours like Caputo. It would just be nice to have a more convenient solution.

Delicious!
Delicious. It’s a unique texture- a little chewy. Very easy to make. I made it in a miso soup. I highly recommend! Perfect for those who need gluten free noodles or who are sensitive to carbs.
