Heaven in a cup
Excellent, received fast. Saved a ton compared to the other fresh roaster in GA who jacked up their prices way too high almost $90 and it aint organic cert. Will stay right here to order again. Plus this light roast is truly best way to taste sidamo in its truest form imo. Looks like peaberries too which i didnt recall before overall outstanding my whole house smellslike heaven WHAT A HAPPY CUP worth treating yourself!

Excellent light roast coffee
First off, I can't stand dark roasted coffee. It's more bitter in flavor and has a lower caffeine content due to overroasting. It's hard to find a good light roast coffee because most roasters want to sell darker roasts to increase profits (I'm looking at you Yuckbucks) which needs sugar to make it more palatable, thus increasing the addiction levels to their products. Light or medium roast coffee provides those natural flavors that so many coffee connoisseurs are looking chasing in every cup. This coffee roaster does it right. Every light roast that I've had has been heaven in a cup every time and consistently. Love these beans!!

Damn good coffee
I was very skeptical but bit the bullet and bought the big bag and I am impressed! Tastes great as a drip coffee but the flavor profile really comes out with a pour over. Will definitely be purchasing more from this company. I’ve never had coffee this good at this price point.

Nice smell
Not bad, good smell, but, since I'm not an expert drinker or addict, for my personal taste it's a little bit on the bitter side, although I know that for a experimented coffee drinker it would not be the case.

Not Fresh, Not as Good as the Non-Organic
A few weeks ago I purchased the much cheaper version of this, the "Guji Sidamo" which was an OK coffee, so I figured I'd try this organic version as it said there would be blueberry and lighter roast notes. First off, it was not fresh. The expire date (1 year from roast date) was 2 months past when I got the bag. This is just too old to make good espresso. At $16/lb this is the same price range as some local roasters. When I got the non-organic, it had the same date, but at that time was only 6 weeks old, so usable. Now to the taste. It's on the light end of a medium roast. Meaning it's harder to dial in to prevent sour shots. Usually it's worth that hassle to get the fruity notes. However, on this coffee there were none of those notes present (maybe they were there when it was actually fresh?). So the end result is a coffee that can be bitter and sour at the same time, and has this little narrow range to dial in... and no reward at all for doing that. The non-organic version is just better balanced and easier to dial right off the bat. I did spend some time dialing as best as I could, but it didn't seem to make any difference. For reference I'm using a high extraction basket (3k hole), paper filter on the bottom, screen on top. It was best at a 2:1 shot, but again "best" was really just meh. As a turbo shot it just gets bitter. As a luongo, it's verrry bitter. I'm not buying this again. I *might* get the non-organic version, as it's a pretty good deal, but this organic version was basically a waste of money I should have spent on something local instead.

It's okay coffee.
I ordered this coffee a year ago initially(sold in black bag that time). The taste was awesome so I gave it 5 stars! The one I recently received has a more plain taste with not much berry and cream strong notes. It has some bitter and light burnt like aftertaste. It might be due to the fact that the roast is Medium-Dark (even more Dark than Medium). It's not obviously the Light roast. I remember it was not a Light roast a year ago as well. But, it might have been slightly lighter roast at least. At the end, there is a slight downgrade in the taste. So, I'm giving it 3 stars now. Otherwise, the coffee is fine. I don't like in any sense a burnt like aftertaste getting closer to Columbian Supreme notes. I wouldn't expect it from Organic Ethiopian Sidamo, which should have a unique pleasurable berry cream like taste. It's okay. Not at this time then, but too much is 5 pounds for this kind whatever it is: a different quality of the beans or overroasting to the point of bitter notes now...
