great substitute in any recipe
I make a special cake for the holidays and give it out to friends. I make a lot of them and forgot which ones were with GF flour and which were with regular flour. No one could tell the difference (taste or texture wise) - including myself!! Now I have to mark which ones are GF and which are not. I will say tho that the raw dough is a bit gooey-er than regular flour and sometimes likes to crawl up your beater shaft but the cooked result shows very little difference. same in pancakes . Only suggestion is to substitute buttermilk (or soured milk) and baking soda for the liquid portion of your recipe

Use a little less for sauces, otherwise it is AMAZING
Unlike some other GF flours, this is milled pastry-fine, making for light pies, cakes, and other baked goods. The one downside is that it is gummy when used as a thickener, so start with about half of what the recipe says and tweak it from there.

Holy moly y’all. Okay let’s say you impulsively decide, two days before leaving for family Thanksgiving in Dallas that instead of being sad about all the food you can’t eat BECAUSE MOST OF LIFE’S JOY INVOLVES GLUTEN that um you’re totally going to figure out how to make gf pumpkin empanadas. Round one, a yeast recipe plus Bob’s Red Mill 1 to 1- not completely sandpaper but pretty close. Round two, same flour, better recipe (not yeast) and the dough was so dry and cracked the task seemed completely hopeless. Round three, you spring for special ordering Cup4Cup and… well, it’s fantastic. Dough is rolling out and holding in the good stuff. You start thinking you could make pizza dough… cake… who knows. You are invincible now. Get this magic.

Great Flour for my Bread Machine
On the package, they state they do not recommend using this with yeasted bread recipes, but I use 2 cups of this with one cup of Bob's for my bread machine to make gluten-free sandwich bread all the time with no issues. It seems to hold up well. I've tried it with other recipes, like strawberry cobbler and it seems like a nice lighter flour, unlike some that make baked goods come out like rock-hard bricks, so there is still some sponge and give to the end result. I highly recommend this for gluten-free bread, even the yeasted kind.

It is so easy to buy from AMazon. 2 bags come and you don't have to scurry around town to find it.Allows me to know I have the best gluten flour. This formula was put together by Thomas Keller and team from the French Laundry.
